Semolina Cappelli Trenette are obtained from the processing of ancient durum wheat "Senatore Cappelli" stone-ground, selected by the Association of Ancient Grains in Tuscany. The wheat is transformed into semolina through stone grinding and then processed into pasta by Pastificio Chelucci using traditional methods and dried at low temperature in static cells to fully preserve all the nutritional properties of the wheat.
Drying Time:
The pasta is dried for 3 days (72 hours) at temperatures below 38°C inside static cells.
