Semolato Cappelli Strigoli are obtained from the processing of ancient "Senatore Cappelli" durum wheat stone-ground, selected by the Association of Ancient Grains in Tuscany. The wheat is transformed into semolina through stone grinding and then processed into pasta by Pastificio Chelucci using traditional methods and low-temperature drying in static cells to fully preserve all the nutritional properties of the wheat.
Drying Time:
The pasta is dried for 3 days (72 hours) at temperatures below 38° Celsius in static cells.

Strigoli are versatile and adapt well to a wide range of sauces, from fish to meat or game ragù, or simply dressed without sauce. With vegetables, they pair beautifully with a succulent pesto or a sauce based on chickpeas and rosemary.
