The Senatore Cappelli shapes are obtained from the processing of stone-ground ancient "Senatore Cappelli" durum wheat, selected by the Association of Ancient Grains in Tuscany. The wheat is transformed into granulated and then processed into pasta by Pastificio Chelucci with traditional systems and drying at low temperature in static cells, to fully preserve all the nutritional properties of the wheat.
